No sugar blueberry muffins

Blueberry muffins are classics. Who doesn't like them? Sadly, the ones bought from the store are full of preservatives and artificial flavours. Not to mention how much sugar and trans fat they have.


Here I present you a super tasty healthy recipe for homemade blueberry muffins. You will love these!





👇You need👇:


🔸️1 cup + 2 tablespoons oat flour (or blended oats)

🔸️1 cup packed super fine blanched almond flour

🔸️1/4 teaspoon salt

🔸️3/4 teaspoon baking soda

🔸️2 eggs, slightly beaten

🔸️1/3 cup pure maple syrup

🔸️1 teaspoon vanilla extract

🔸️1/2 cup unsweetened almond milk (or any other milk of choice)

🔸️1 tablespoon olive oil

🔸️1 teaspoon fresh lemon juice

🔸️1 cup fresh or frozen blueberries





👇Method 👇:


🔸️Mix well in a bowl the blueberries with the 2 tablespoons oat flour and lemon juice.

🔸️In a separate bowls mix all dry ingredients together and all wet ingredients together.

🔸️Mix everything together and fill previously greased muffin tin with the batter.

🔸️Bake 20 min at 170°C.

🔸️Let cool for 20 minutes on a cooling rack.
