Grilled Halloumi Salad For All The Senses (Balsamic Vinegar Dressing)
This salad is an interesting combination of flavours. Chewy halloumi cheese high in protein, fresh leafy greens, crunchy walnuts rich in healthy fats, and the dressing makes it all come together nicely.

Ingredients:
Halloumi cheese
Rucola leaves
Crushed walnuts
Pear
Dressing:
Olive oil
Honey
Salt Black pepper Balsamic vinegar
Dijon mustard (a little bit)
2. Honey-Infused Chickpea Carrot Salad (Best with Roasted Salmon)
This salad, rich in fibre and complex carbs, goes really well as a side dish with roasted salmon fillet (or at least we really like the combination).

Ingredients:
Grated carrots
Canned chickpeas (drained and rinsed)
Finely chopped parsley leaves
Dressing:
Olive oil
Lemon juice
Salt
Black pepper (optional)
Cumin powder (strange, I know, but trust me)
3. Apple, Beetroot, Carrot Salad (Lemon-Honey Dressing)
Here is a slightly different option - this ABC colourful salad is a mix of juicy, earthy, sour, crunchy and sweet. Full of vitamins and very appealing to the eye.

Grated beetroot
Grated carrots
Grated apples
Finely chopped parsley
A pinch of freshly grated ginger (optional)
Chopped roasted almonds (optional)

A little bit of honey
4. Mediterranean Lentil Salad (Garlic-Olive Oil Dressing)
This is one of my favourite meals. Rich in fibre and protein, this colourful salad brings the Mediterranean vibes straight to your table.

Feta cheese
Cooked brown lentils
Green olives (or Kalamata olives)
Tomatoes
English cucumber
Red onion Parsley
Dressing:
Olive oil
Minced garlic
Salt
Black pepper (optional)
5. Sweet Potato Bean Salad (Avocado-Lemon Dressing)
“Post-workout refuel” is what comes to my mind when I make this "salad". Feel free to add a little grilled chicken on the side if you like.

Roasted sweet potato cubes
Canned red kidney beans (drained and rinsed)
Baby spinach leaves
English cucumber
Cooked shiitake mushrooms (I just cook them on a pan with a bit of oil.) Dressing: In a food processor blend

7. Tuna Salad - High Protein
One of my personal favourites since forever. Light yet satisfying, this post-workout salad pairs protein-rich tuna with crisp lettuce and sweetcorn for a fresh, energizing boost.

Ingredients:
Canned tuna (in brine)
Green leaf and/or red leaf lettuce
Sweetcorn
Dressing:
Olive oil
Salt
Lemon juice (optional, but preferable, hehe!)

9. Easter Salad
Deeply rooted in my childhood memories as the salad we have when the spring comes. Crisp, refreshing, bursting with peppery radishes, creamy eggs, and briny olives – perfectly capturing the season’s first flavours.

Last but not least we have this juicy combination of grilled vegetables and yogurt-dill dressing. One of my favourites for the summer and it's a great side dish for when you are having a barbeque.
